Szechuan pepper (also spelled Sichuan pepper, Chinese: 花椒 huā jiāo) is a unique spice used in Chinese cuisine, especially in Sichuan cooking. It’s not a true peppercorn like black or white pepper — instead, it's the dried husk of the seed from plants in the Zanthoxylum genus.
